Cauliflower is such a versatile vegetable. One of my favorite things to do with this cruciferous vegetable is to turn it into “rice.”

Ingredients
Instructions
  1. Place the ghee into a large non stick pan over medium heat.
  2. Add the garlic and ginger and saute until fragrant.
  3. Add the spices and saute for 3-4 mins.
  4. Add the half cauliflower rice and gently mix into spices and ghee. Saute for 3 mins before adding the remaining mixture.
  5. Add the pepper and salt to taste.
  6. Continue to stir the rice and cook for 8-10 min, until softened and cooked through.
  7. Remove the frying pan from the heat.
  8. Serve and garnish with coriander.
