Instructions
  1. Mix all the Roti ingredients - coconut flour, ghee, psyllium husk, and butter oil to make a dough and let it rest for 10 minutes.
  2. Mix all the spices and chopped onion, bell pepper, and green chillies into crumbled paneer to make the filling.
  3. Take the roti dough and divide it into 4 equal parts.
  4. Roll one of the parts and cut it using a lid into an exact circle and set it aside.
  5. Roll another piece too into a circle and place 1/4 of the whole filling on top of this piece and spread the stuffing.
  6. Now place the roti that you rolled earlier to cover the paneer.
  7. Press at the edges to stick both rotis together nicely.
  8. Once the edges stick, use the pot lid to cut the whole paratha into a nice and even circular shape.
  9. Heat the pan and place the stuffed roti on it to cook. Keep applying butter on it from time to time and cook it to the desired color.
  10. Flip it over and do the same on the other side. Once done, remove it.
  11. Keto paneer paratha is ready! Serve hot with tomato chutney and tea.
