Firstly, chop the nuts and mix them with raspberries in a bowl together.
Take a double boiler and add the cacao butter and unsweetened baking chocolate to a bowl and let it melt on low heat. Once it is completely melted, take the bowl off the heat.
Add monk fruit now and then whisk in. Pour the heavy cream and whisk until nicely incorporated. The chocolate cream will be a little thick.
Add chopped nuts into the bottom of the molds of your choice.
Once you are done adding your nuts, spoon in the chocolate into each mold until completely filled. Make sure to fill them to the top and to level them out with a knife.
Tada..! Your delicious chocolates are ready! Once filled, place them inside the refrigerator to cool for 3+ hours. Enjoy it whenever and wherever you want!
