Instructions
Preparation
  1. Cut the chicken breast into bite size pieces.
  2. Slice the onion and chop the tomatoes. Chop the spinach as well.
  3. For cashews paste, soak the cashews in warm water for 15 minutes and blend with the water to get a smooth paste.
Cooking on the stovetop
  1. Heat oil in a pan and add cumin seeds and black cardamom. Stir it for 10 seconds.
  2. Add onions and cook until they caramelize and turn golden brown.
  3. Now add chopped tomatoes, ginger-garlic paste, cashew paste, powdered spices, and salt. Saute for 8-10 minutes on low to medium heat or until the masala is thick.
  4. Then add chicken pieces and 1 cup water and cook on low heat until tender.
  5. After that add the chopped spinach leaves and cook for 2 minutes more.
  6. Palak Chicken Curry is ready! Serve hot with rice or chapati.
Recipe Notes
  • You can adjust the curry according to your need. If you want more gravy then add more water and if you want a thick gravy, cook the curry on high heat until most of the liquids get absorbed. 
  • If you don’t have some of the spices required for this recipe, you can substitute them with garam masala powder.
