Instructions
In a pressure cooker, add oil or ghee and once it’s hot, add all the whole spices and saute for a few seconds.
Then add onions, ginger-garlic paste, green chilli, and saute for 2-3 minutes until onions turn light golden in color. Keep stirring.
After this, add mixed vegetables and mint and cook for a minute.
Add rinsed quinoa, garam masala powder, turmeric powder, salt and water and mix everything well. Adjust the seasoning at this stage.
Close the lid and cook for 1 whistle on medium flame. Now switch off the flame.
After steam is released, fluff up the quinoa gently. Squeeze some lemon juice and garnish it with cilantro.
Quinoa Vegetable Pulao is ready to eat! Serve it with yogurt or raita.
