This Low Carb Vanilla Pastry cream is sinfully delicious and creamy but guilt-free! Made with sugar-free and all healthy ingredients, you fall in love with it.
Mix egg yolks, arrowroot salt, and erythritol in a large bowl together to get a light yellow creamy paste.
Take a small pot, pour in the heavy cream and put on medium heat until it starts to bubble. Once it bubbles, turn off the heat.
Take one cup of hot cream and pour it onto the egg yolks slowly. Mix it properly.
Once the cream has been added, pour the egg mixture into the cream in the pot, add vanilla and then mix to combine again.
Set the pan back over medium heat and whisk constantly.
Soon, the cream will start to look thin and frothy and then eventually it’ll start to thicken after a couple of minutes. Once it’s thickened to a pudding consistency, turn off the heat immediately.
Put the pastry cream into a strainer to sieve it.
Cover it with wrap, let it cool down to room temperature and then cool it in the fridge until ready to serve.
