Ingredients

Vermicelli
(semiya)

(carrot, beans and peas, finely chopped)

Instructions
Dry roast the vermicelli on medium flame until light golden. Don’t stir until brown. Transfer it to a plate.
Heat oil in a frying pan and add peanuts and cashews. Fry them until golden. Transfer to a plate.
Now add mustard seeds, cumin seeds, chana dal and urad dal in a pan and fry until the dals turn golden or get well roasted.
Then add onions, hing, ginger, green chilli and curry leaves. Fry until onions turn translucent, or for about 2-3 minutes.
Add carrot, beans and peas and saute for another 3 minutes. Cook on a low flame until they turn slightly tender.
Now pour water and add salt into the pan. Bring it to a boil.
Transfer the roasted vermicelli into this pan and stir.
Cook vermicelli on a medium flame till all the water is absorbed.
Now cover the pan and cook on the lowest heat for 2 minutes.
Turn off the flame and garnish with grated coconut.
Vermicelli Upma is ready! Serve it hot.
