  1. For the Vadas: Combine the urad dal, green chillies, ginger and salt, mix them well in a mixer and grind to a smooth paste. Keep it aside.
  2. Divide the batter into 6 equal portions and keep aside.
  3. Heat the oil in a deep non-stick pan. And deep fry the vadas.
  4. Wait until it turns golden brown and keep them aside once cooked.
  5. For the Topping: Combine the curd and sugar in a bowl mix well.
  6. Take enough water in a deep bowl and soak the vadas for 15-20 mins.
  7. Squeeze excess water and flatten lightly between your palms.
  8. Arrange the vadas on a serving dish and top with the curd mixture.
  9. Top with chilli powder, 1 tsp red chutney, a little cumin powder and black pepper.
  10. Garnish with chopped coriander.
