Heat water, filled about an inch high in a narrow saucepan. Add 1 teaspoon black salt and 2 teaspoons white vinegar (optional) and bring to a simmer over medium heat.
Meanwhile, crack 1 egg into a little cup, preferably a custard cup so that the liquid egg retains its shape and doesn’t run flat.
Now stir the boiling water in one direction until it forms a smoothly spinning whirlpool.
Now carefully dump the egg from the cup into the center of the whirlpool. The water swirl will help the egg retain most of its rounded shape and will prevent the liquid eggwhite from spreading inside the pan.
Now turn off the heat and cover the pan for 5 minutes.
The egg is done. Use a slotted spoon to take it out and transfer it into the serving dish.
Repeat the same process with the other egg.
