Upma is a thick, porridge-like breakfast dish that is generally made from semolina with some veggies in it. Here we have an equally healthy and delicious but a low-carb and Keto friendly Upma recipe.
Separate the cauliflower into florets and stalks and wash them thoroughly. Mince the florets with the help of a grater or food processor such that they resemble fine rice.
Take a frypan, add coconut oil and bring to medium heat.
Add mustard seeds, ginger, green chilli, hing and curry leaves. Saute for 20-30 seconds.
Now add onions and cook till the onions become tender.
Then add mixed veggies and cook for 2-3 minutes.
Now add cauliflower rice and salt. Mix everything well and cook on medium low heat for 4-5 minutes.
Once the cauliflower is cooked, garnish it with lime juice, coriander and grated coconut and mix well.
Cauliflower vegetable upma is ready. Serve it hot and enjoy it with coconut chutney.

You can add roasted peanuts.
You can use ghee or olive oil instead of coconut oil for this recipe.
