Aloo Chole Curry Recipe
Aloo chole curry is one such fusion curry which has the goodness of both chickpeas & potatoes. The recipe has a similar texture and tanginess as the chole curry but the introduction of diced potatoes adds a twist and taste.
Instructions
Preparation for aloo chole curry
Soak chole overnight for 7-8 hours with enough water. Drain the water after that.
Wash the potatoes well. In a pressure cooker, add potatoes, chickpeas and 3-4 cups of water. Pressure cook for 7-9 whistles on medium to low flame.
Remove the potatoes from the cooker. Peel and dice them.
Then strain the stock of the chickpeas and keep it aside.
In a grinder, make a fine powder of cinnamon, tej patta, cardamom, cloves and whole black pepper. Keep it aside.
Making aloo chole curry
In a pan, add the chickpeas and cook on a low to medium flame till the liquids dry up.
Then add potatoes, tomatoes, ground chana masala, turmeric powder, red chilli powder, green chillies, salt and 1 cup of the strained chana stock.
Stir everything well and cook the gravy for 8-10 minutes on low to medium flame.
Now heat 1.5 tbsp of oil or ghee in a small pan and pour this hot oil or ghee to the chana mixture. Stir and cook it for 2-3 minutes.
Then add 3/4 to 1 cup water and continue to cook for 4-5 minutes or till the gravy thickens.
Again heat the remaining 1/2 tbsp oil or ghee in the same small pan and add it to the aloo chana masala.
Now turn off the flame and stir in the minced ginger and coriander leaves.
Aloo Chole Curry is ready! Serve hot with bhature or puri.
