Instructions
  1. Preheat the oven to 180c/390F.
  2. Put a large saucepan over high flame and add oil, garlic and ginger. Now saute for 3-5 minutes until onions are translucent.
  3. Add tomato paste, basil, thyme, salt and pepper and cook for 3 minutes. Then add diced tomatoes.
  4. Reduce the flame and simmer, partially covered for 20 minutes, until the tomatoes have softened into a chunky sauce.
  5. Now brush the slices of eggplant with oil and sprinkle salt.
  6. Place a cast iron grill pan over medium high heat and cook the eggplant slices for 3 minutes on each side.
  7. Now place 6 slices of eggplant at the bottom of a casserole dish.
  8. Then top it with a tbsp of chunky tomato sauce and a slice of mozzarella cheese. Repeat the same with layer 2 of 6 eggplant slices.
  9. Now add the 3rd layer of eggplant slices, to this layer, add a tbsp of chunky tomato sauce and sprinkle the shredded parmesan and mozzarella cheese.
  10. Now bake them for 25 minutes until the cheese turns golden brown.
  11. Keto cheese eggplant dish is ready! Now sprinkle some fresh parsley and serve hot!
