Instructions
  1. Dice the vegetables and set them aside in a bowl.
  2. Then mix together the coconut and coriander powder, along with turmeric and red chilli powder.
  3. Heat a skillet over a medium to low heat and add coconut oil in it.
  4. Add mustard seeds to the hot coconut oil. Also add some dried red chillies and curry leaves.
  5. Once the mustard seeds stop sputtering, add the diced vegetables and green chillies and saute for about 1 minute on medium flame. Cook it well.
  6. Then add hing, coconut and coriander powder and water to the mixture. Heat and bring to a boil.
  7. Add salt and stir well.
  8. Your keto sambar is ready! Garnish with cilantro or coriander and serve hot.
