This recipe is made with chopped cauliflower rice that resembles rice grains. It is healthy, low carb & high in fibre and is the best alternative to regular rice. I was a little skeptical about the taste but surprisingly it tastes good. So try it once to believe it.

Mexican Cauli Rice Recipe
Instructions
  1. Heat a frying pan and add butter, garlic powder and onion flakes and gently saute for 3 minutes till the onion becomes translucent.
  2. Now add cauliflower rice, pepper & salt to the pan and saute for 3 minutes until the cauliflower begins to soften.
  3. Then add tomato puree and stir well. Cook for another 3-5 minutes till tender.
  4. Mexican Cauli Rice is ready. Top it with cilantro and serve hot.
Recipe Notes

If you like spicy food, you can add jalapeno or red chilli powder according to your taste.
