Mushroom curry is a delicious Indian curry prepared with mushrooms, tomatoes, onions, spices and herbs. This mushroom curry recipe is one of the best curries to try for lunch or any main course.
Firstly, dry roast the coriander seeds, jeera, pepper and dried red chili.
Now blend it into a smooth powder and keep it aside.
Now in a large Kadhai heat the oil and saute cumin seeds and cinnamon sticks.
Add onions, ginger garlic paste and saute till they turn slightly golden brown.
Further, add tomato pulp and saute it till oil separates from the sides. Additionally, add turmeric powder, garam masala powder, salt and the masala powder that you prepared in step 1.
Saute on low flame for a minute or till the masala mixture is cooked well.
Add sliced mushrooms and mix gently.
Cover and simmer for 5 minutes, or till mushrooms sweat.
Further, add 1 cup of water and the cashew paste.
Mix well. Cover and simmer for 15 minutes, or till the mushrooms get completely cooked.
Add cream, coriander leaves and kasuri methi. Mix well.
Mushroom curry is ready! Serve hot with rice or roti.
