Chicken curry has many different regional variations. This is one of India’s favorite dishes. Chicken curry is an absolute must have for any Indian dinner party or a get-together. It can be served with naan, roti, or rice.

Instructions
  1. First heat oil in a pan, then add bay leaf, cinnamon, cloves, and green cardamoms. Wait for a minute to let the aroma build.
  2. Add chopped onions and chillies. Saute onions till they turn golden in color.
  3. Next, add ginger and garlic paste and saute for a minute till you get aroma.
  4. Add tomatoes, turmeric, and salt and mix it well. Now cook for a few minutes.
  5. Now add yogurt, red chilli powder, garam masala, and coriander powder.
  6. On a low flame, cook until the paste or the mixture smells good.
  7. After that, add chicken and coriander leaves and fry for 3-4 minutes.
  8. Cover and cook on a low flame for 3-4 minutes more. This step is only for the chicken to absorb all the flavors from the spices.
  9. Meanwhile in a separate pot, heat up 1 cup water.
MAKING CHICKEN CURRY :
  1. Pour hot water just enough to make a thick curry. Do not add too much water as sometimes chicken also lets out a lot of moisture.
  2. Cover and cook on a low flame till the chicken curry turns thick.
  3. You can add garam masala to make the flavor stronger.
  4. Cook for 3-5 mins. By now the chicken may have cooked and softened.
  5. Garnish with coriander leaves and serve it hot!
