Here is a quick and easy instant recipe for an authentic south-Indian lentil and vegetable stew, Sambar. This curry is packed with vegetables and finished with a touch of tangy tamarind paste. Wash and soak toor dal for half an hour with enough water.
In a pressure cooker, add dal with salt and turmeric and pressure cook it for 4 whistles. Set aside and allow the steam to release before opening the cooker.
Now in a frying pan heat the oil and add mustard seeds, dried chilli and asafoetida.
When the seeds start to sputter, add the green chilli and chopped vegetables. Now saute for a few minutes.
Then add salt, sambar powder, tamarind paste and 1 cup water. Mix well and cook it until vegetables are tender, or for about 10 minutes.
Add the cooked dal into the pan and simmer for another 5 minutes.
Authentic south Indian Sambar Lentil Stew is ready. Serve it hot.
