Sabudana Khichdi Recipe
Sabudana khichdi is always delicious, easy and simple to make. It is usually prepared during the festive season of Navratri, on Ekadashi or Janmashtami when people are fasting and is a very satisfying meal.
Instructions
Firstly, rinse sabudana well in water. Then soak it for 3 to 5 hours.
After soaking, drain the sabudana and keep it aside.
Now boil the potatoes. Peel and cut them while they are hot.
Now in a pan, dry roast the peanuts until browned and when they cool, grind them into a coarse powder in a grinder.
Now mix the powdered peanuts with salt, sugar, and drained sabudana.
Making Sabudana Khichdi
In a pan, heat the peanut ghee or oil and fry the cumin till it turns brown.
Then add the green chillies and curry leaves. Fry for a few seconds and then add ginger.
Saute till the raw smell of ginger goes away. Now add boiled potatoes and saute for a minute.
Then add sabudana and stir on a low flame for 4 to 6 minutes.
When sabudana loses its opacity and starts becoming translucent, it means it has cooked. Don't overcook as it might become hard.
In the end, add lemon juice and switch off the flame.
Sabudana khichdi is ready! Garnish it with some grated fresh coconut and serve hot.
Recipe Notes
You can skip both curry leaves and ginger if you want.
