Instructions
  1. Dry roast the vermicelli on medium flame until light golden. Don't stir until brown. Transfer it to a plate.
  2. Heat oil in a frying pan and add peanuts and cashews. Fry them until golden. Transfer to a plate.
  3. Now add mustard seeds, cumin seeds, chana dal and urad dal in a pan and fry until the dals turn golden or get well roasted.
  4. Then add onions, hing, ginger, green chilli and curry leaves. Fry until onions turn translucent, or for about 2-3 minutes.
  5. Add carrot, beans and peas and saute for another 3 minutes. Cook on a low flame until they turn slightly tender.
  6. Now pour water and add salt into the pan. Bring it to a boil.
  7. Transfer the roasted vermicelli into this pan and stir.
  8. Cook vermicelli on a medium flame till all the water is absorbed.
  9. Now cover the pan and cook on the lowest heat for 2 minutes.
  10. Turn off the flame and garnish with grated coconut.
  11. Vermicelli Upma is ready! Serve it hot.
