Instructions
  1. Preheat the oven to a high temperature (200°C/ 390°F).
  2. Wash and dice the onions along with bell pepper and put them in a large mixing bowl.
  3. Wash the spinach, chop it slightly and add it to the bowl as well.
  4. Add the eggs and salt, mix well.
  5. Mix in the cheese to the batter.
  6. Add some curry powder.
  7. Grease the muffin tin with oil and kitchen paper/baking brush and pour the egg mixture evenly into the muffin slots.
  8. Pop the tray into the oven for 20 minutes or until the tops are firm to the touch.
